Private Chef, Event and Household Manager
Ownership and management of my own chef-catering, hospitality and household management company since 1991, providing an exclusive chef and management service together with the organisation and styling of both private and corporate receptions throughout the UK.
For seventeen year I have worked towards providing an excellent service, gaining advice and help from Marco Pierre White and Gordon Ramsay, amongst others, and declining posts in many kitchens in order to concentrate on developing my business.
Having lived in Singapore, Tokyo, Australia and New York, as well as having the opportunity to travel widely, I have endeavoured to develop a very international style of cuisine, which has been rated by some to be the equivalent of one-two star Michelin level. I pride myself on offering a superb butler service in addition, with meticulous attention to every detail.
I have undertaken numerous household management assignments in private residences, which have all required an exceptional level of cooking and organisation, involving the preparation of wholesome family food together with Michelin-starred level international meals, including macrobiotic, if required. Cooking assignments vary from a small, formal dinner for 6 guests in a private house, to 4-5 day long shooting or summer party at a country house or stately home for 3000 guests or more. For smaller parties, I also work as butler - being highly competent in all areas of private residence service skills.
My clients all expect the highest level of discretion and commitment, together with the accommodation of all household catering requirements, including the preparation of domestic and security staff meals. | would expect to offer considered menus to clients; plan, shop, prepare and serve meals accordingly, and, if necessary, travel with the family.
My private household work includes catering numerous shooting parties for both small groups and for up to 100 guests, including children, nannies and beaters, for example, at Althorp.
In addition, I have acted as Chef for two large chalets, concurrently, in Verbier, for The Duchess of York and Paddy McNally, as well as cooking at royal summer residences in the South of France and Tuscany. These positions involved all ordering, transportation of provisions from London to necessary destinations and the establishment and settlement of suppliers accounts locally.
In Britain I have organised and cooked the Christmas food at Wood Farm (the annexe to the royal house, Sandringham) for the Duke and Duchess of York for several years, also assisting the butler at all times. I have also organised a similar party at Craigowan House on the Balmoral estate.
I have cooked on many occasions for Earl Spencer at Althorp. This involved all catering for Earl Spencer's family, staff and guests - from between 10 to 1000 people per day. We have also been required to cater large formal corporate receptions for up to 2000 guests, Earl Spencer's wedding, numerous private and corporate shooting weekends and charitable events for the Princess of Wales Memorial Fund.
We have also planned the catering and cooked for many children of all ages, including Princesses Beatrice and Eugenie, and occasionally, Princes William and Harry, and the children of Johnny Depp in the South of France.
My corporate has involved my chefing both intimate and larger scale receptions at institutions in London, charities, parliament and historic venues. These events include launches, weddings and seasonal celebrations. I have annually catered a party for her Majesty Queen Elizabeth to Celebrate Commonwealth Day, whereby 400 guests are in attendance.
As a result of catering receptions for my business in London and managing chalets, shooting and stalking lodges, I am very aware of sensible budgeting and management. One of my strengths is to be able to maintain a kitchen to a very high level within a realistic budget.
